The rice with eggs is a typical meal from Elche. It is prepared with rice and a "crust" of eggs over it.
Ingredients for 4 persons:
- 400 grs rice
- your choice salt
- 200 grs chicken or pork rib cage cut up into pieces.
- 200 grs rabbit cut up into pieces.
- saffron a little.
- 150 grs grate tomato
- 4 olive oil spoon
- some chickpea.
- sausage (2 white, 2 red, 2 "butifarrones" y 2 "blancos") If you don't find this kind of sausages put whatever you find.
- 9 eggs
Fry the sausages and put them apart on a plate. Then fry the meat, rabbit and chicken and put it inside a recipient (perol or paella)with one liter of water and the chickpeas. Fry the tomato and put it into the recipient.
Boil everything for 15 minutes and put the rice in. Once all the water is evaporated leave resting for a while since the rice is dry. Then we put the sausages with the eggs scrambled with a bit of salt. All together will be baked with high fire during 10 minutes. In that time the eggs will rise and take a soufflé color, then it is time to take it out from the oven.
